A Healthy Holiday Cookie Recipe for You

This cookie checks all the holiday boxes of being warming, cozy and hearty. Gluten-free, dairy-free and refined-sugar free, you can enjoy it while still feeling good.

Cinnamon Chocolate Chunk Cookies

Ingredients:

1 tbsp chia seeds

3 tbsp water

1/2 cup coconut oil, melted

1/2 cup honey (preferably raw & local)

1 tbsp vanilla extract

2 cups almond flour

1 cup brown rice flour

heaping 1/2 tsp pink Himalayan salt or sea salt

1/2 tsp baking soda

2 1/4 tsp ground cinnamon plus a little for sprinkling

3/4 cup sugar-free dark chocolate chips

Directions:

Set oven to 350 degrees. Line a baking sheet with parchment paper.

Make chia egg: combine 1 tbsp chia seeds with 3 tbsp water. Let sit for 10 minutes.

Melt coconut oil.

Mix dry ingredients: almond flour, brown rice flour, baking soda, salt and cinnamon.

Combine wet ingredients: coconut oil, honey, vanilla extract.

Gradually stir the dry ingredients into the wet ones, stirring to combine.

Mix in the chia egg.

Add chocolate chunks and stir to distribute.

Place tablespoon amounts of dough on the parchment-lined baking sheet, an inch apart, and flatten with your hand. Sprinkle with cinnamon.

Bake for 10 minutes or until slightly golden around the edges.

Let cool and enjoy! Store in an airtight container.
